Why you stayOf course, a visit to Dr G’s isn’t only about Martinis. Anyone who’s spent time at the crew’s other venues, moody Brisbane laneway dweller Death & Taxes, or Cobbler at West End, will know that whisky is likely to get a rather large look-in, too. Fittingly, given the venue’s name, there are also four variations on the Gimlet, the famous gin and lime cocktail, in a 25-strong cocktail list. The list is neatly divided into categories determined by drink style, such as “fruit-forward Martinis” and “stirred down” for the spirit enthusiast. But, as you’d expect, bar staff here are only too happy to put their 800-bottle bar to work, crafting any drink you can think of. And rest assured, additions such as the beautifully balanced cucumber cordial at work in your Cali Cooler, say, will be made in-house, and your drink will arrive prettily garnished in a well-considered glass. This is a beautiful room, high-ceilinged and in tune with the heritage-listed five-storey former warehouse it fills. There’s lovely hardwood flooring, plenty of plush button-back leather upholstery, and lots of texture including original brick walls and a sharp grey and white marble bar that’s nine metres long. The atmosphere changes depending on the time of your visit, but it’s never less than gracious. The elegant surroundings seem to tame the worst messes and excesses of post-work sessions, despite the CBD location.
