Built on generous foundations of Australian grown Juniper (Juniperus Communis), this gin combines 13 carefully selected botanicals. These include cumquats and saltbush we grow here at the distillery, as well as oyster shells we collect from our local oyster farmers. The result is a gorgeous savoury gin, with an almost creamy mouthfeel, that absolutley shines in any kind of martini.
