Destemmed fruit crushed into 7t vats for inoculated fermentation. Hand plunged 3 times a day, basket pressed then matured 22 months in 1–4yo French oak barriques. All Saints Estate sees the beauty and elegance in the durif grape – yes, it most definitely exists – and produces a style that can overcome any varietal prejudice. With forest-floor notes, wild berries, violets, top spice nuances and vanilla, it's an arresting introduction. Smooth palate, yet retains the grape's robust nature and power. Sensitive handling and winemaking on show.
