NOW EXPERIENCING:Restaurant Maria

Punchy Mediterranean-channelling snacks and a drinks list that roams from Lisbon to Launceston are the main acts at this spot with dress-circle views over the Derwent.

Ambience at Restaurant Maria, Hobart
Why you goHobart’s lofty Aloft restaurant has claimed the city’s best views since 2015, thanks to its absolute waterfront position on the top of Brooke Street Pier. Now, its sister venue, the peach-and-mocha-toned, mod-Med Restaurant Maria, has grabbed its own dress-circle position just one floor below. Like Aloft, Maria has a set menu for dinner, but walk-ins are also encouraged to drop in for early-evening apéritifs and snacks as the sun sinks over the Derwent.
What drink to orderManager and sommelier Hedley Monks is mad for a Martini, and he’ll steer you in that direction if that’s your thing, particularly the Lebanon Martini he makes with a bespoke gin that local distiller 7K designed specifically for the restaurant. Another appropriately Euro-ish option is the Limoncello Spritz, using a house-made version of the lemon limoncello liqueur. There’s also a very thoughtful beer list, including Wildflower, Hobart Brewing Co and a few options from Italy and Greece as well. Non-alc aficionados are also well catered for with a Virgin Spritz, an alcohol-free Willie Smith’s cider and a locally made citrusy chinotto soft drink.
What to eatWalk-in snackers can choose from almost all of the chef’s menu, with the exception of the larger plates. Co-owner Christian Ryan has never met a big, bold flavour he didn’t get along with, so while the menu at Maria borrows themes from the simple flavours of the Mediterranean, he generally likes to ramp them up with a bit of punch and power. A croquette packed with Spain’s jamón ham and Manchego cheese, for instance, comes out swinging with a generous layer of Italy’s spicy ’nduja sausage spread, while a generous hill of wallaby tartare detours to the Middle East with a moat of hummus and sumac spice. Tasmanian oysters are always a good idea and here they’re served with a bright mignonette dressing spiked with hand-gathered fennel pollen.

Why we love itTiny Tassie is full of surprises. Everyone knows it’s responsible for some of the best sparkling wines and whiskies anywhere on earth, but did you know it’s also the birthplace of some of the world’s coolest… speakers? The duo behind Pitt & Giblin are a couple of local artisans who design speakers crafted out of Australian blackbutt, and Maria has a beautiful example tucked into a high corner near the back of the restaurant. There’s also a very thumbable record collection that spans from Chris Rea to La Roux.
Make it fancySangiovese doesn’t come much fancier than a bottle of Italy’s Brunello di Montalcino, and there’s a good chance you might find a 2019 example on the list here. It will set you back four figures, but there are few rivals when it comes to fine-tannined, spicy Tuscan reds. One for when you're truly going all out.
