Why you goYou can stop with that “it’s pretty good for an out-of-town bar” talk right this instant. This singular establishment that draws on French and Vietnamese influences would attract a crowd in any capital city. That Liberté operates – and flourishes – in a regional centre five hours south of Perth by car is testament to owner Amy Hamilton’s vision and hard work. For travellers headed to Albany and the Great Southern region in general, Liberté is their first port of call thanks to word of mouth. Clued-up locals, meanwhile, keep coming back for thoughtful drinks, punchy share plates, great chat and all the other hallmarks of a good night out.
Why you stayZinc tables, a handsome wooden bar, bentwood chairs and gilded prints – the front room at Liberté looks and feels like the well-worn – and well-loved – Parisian bistro of your dreams. Further down the corridor, past the wall-sized reproduction of the Delacroix painting Liberty Leading the People, is the dining room proper, a 19th century-inspired space decorated with rich velvet drapes and bold splashes of colour. The accent here is unmistakably French with elements of country-casual, as the bar’s address demands. When Liberté – the front bar, in particular – is in full effect, the friendly front-of-house team seem to be enjoying themselves as much as the guests are.

What drink to order“Good booze isn’t cheap and cheap booze isn’t good.” The preamble on the drinks menu is a telling statement of intent and Liberté’s way of saying it doesn’t do jugs of average beer. South-western producers are well represented on the menu, whether it’s beer from “Albany-proud” brewery Wilson Brewing Company or local wines from producers who, like Liberté, play by their own rules and think nothing of blending white and red grapes to make renegade vino. The cocktails have long been Liberté’s forte. The classics – Negronis, Hemingways, Martinis – are mixed with care, while Gimlets made with Earl Grey tea and a smoky Roger Ramjet made with mezcal and a char-grilled pear syrup speak to the bar team’s imagination.
What to pair it withYou don’t have to dine to drink here, but you should. The menu favours flavour and flexibility above all and uses elements of French and Vietnamese cooking to win over guests – sometimes even in the same dish (here’s looking at you, steak tartare with grilled rice paper). Although the likes of steak frites and a vegan mushroom congee will please solo diners, sharing with friends is the best way to make the most of the kitchen’s repertoire of dumplings, fries with a gravy modelled after Vietnam’s famous pho, and the bar’s beloved garlic, crab and chilli noodles.
Don’t leave withoutOne for the road. The bar’s licence allows customers to take away most of the drinks on the list, including its cocktails. Considering Liberté gets its hands on plenty of rare, interesting things from small producers, this form of try-before-you-buy is one we can all get behind. It’s also worth noting that the bar is inside the historic London Hotel, one of the first licensed venues in Western Australia. Historic features, like the grand staircase in the hallway, abound throughout.

Who to takeLike most bar-restaurant hybrids, Liberté can fit into your life in many ways. The atmosphere can get lively, but things never quite descend to nightclub levels of partying (there’s Studio 146 a few doors up if you want to let loose) so conversations come easy. Broadly speaking, the front room is the place to go for dates and other one-on-one interactions, while the dining room is best suited for group revelry. Reservations on weekends are pretty much mandatory. If you’re just taking yourself, steak frites and something French at the bar is a suitably Hemingway-esque way to live out any unfulfilled Movable Feast fantasies.
