A hidden bar devoted to the celebration of its namesake spirit since 1997, the Gin Palace is one of the Melbourne small-bar scene’s pioneers – and it remains one of the best.

Why you goThe word “institution” gets thrown around a lot these days, but Gin Palace is one bar that truly deserves the title. Stirring the perfect Martini since 1997, this basement space off a CBD laneway dives deep into the world of gin, its shelves groaning with more than 200 varieties from around the globe. But it’s more than the sum of its drinks list. Taking its cues from the gin palaces of the gold-rush era (places no respectable person would dare to tread), this drinking salon has cemented itself as part of Melbourne’s modern history. A place ahead of its time, it pioneered our love of gin and in the process influenced a whole generation of bars and bar owners. It’s a bit rowdy, it’s a bit naughty and it’s a lot of fun. There are plenty of imitators, but only one Gin Palace.
Why you stayAs Dennis Denuto would have said in The Castle, it’s the vibe. A magical combination of hard-to-find entrance, intimate nooks and shadowy crannies, the Victorian-salon charms of the brocade couches and chandeliers make Gin Palace feel like a secret you want to be in on. Arrive early and you’ll get a bit of quiet, but as people flow in from work or dinner it starts to roar in the best possible way. And if the mark of a good bar is appeal to a broad age group, this has the competition licked. After more than two decades it’s not about fashion – it’s about the perfect Melbourne bar, which everyone from Boomers to Gen Z seems to agree on.
What drink to orderA Martini, of course, but which Martini? There’s one for every mood here, whether that’s a James Bond-style Vesper, a Smoky Martini with a spritz of mezcal, or a tribute to the late (and legendary) Gin Palace founder, Vernon Chalker, with his favourite take: Plymouth gin, dry vermouth and a lemon twist. Or perhaps you want a gin and tonic. Again, the choice is dazzling, with each spirit and mixer combination (and garnish) chosen with expert care. We love that they’re served in a Burgundy glass, the big bowl not only perfect for delivering the aromatics but also for extravagant swirling. As you’d expect, cocktails sing in the key of gin – the signature is the Fruit Cup, a long and refreshing sipper made with seasonal fruit and a splash of soda, while gin’s favourite threesome, the Negroni, gets its own tight list exploring twists with local and exotic flavours.

What to pair it withThe toasted chicken, chive and mayo sandwiches – all saucy, finger-lickin’ goodness topped with bacon salt – have their own fan club and will be on the menu until the zombie apocalypse. The short food list proves the drinks are the main game here, but the salted nuts, toasted parmesan biscuits, cheeses or charcuterie will keep your energy levels up to make the most of that 3am license.
Why we love it

It’s not just the old-school braces and ties worn by the staff that make them smart. They all seem to take delight in keeping this sometimes-wild show on the rails. It just goes to show that a mixture of wit and a lot of drinks wisdom goes a long way. So does table service. Bliss.
