One of Sydney’s game-changing cocktail specialists finds a second life in a CBD basement, bringing Prohibition-era glitz and glamour to the Harbour City’s bar scene.

Hidden addresses. Speakeasy vibes. Dapper uniforms. Drinks with far-out flavour combinations that double as experiences. While it’d be a stretch to say one bar introduced Sydney to all these ideas, Eau-de-Vie brought them together more sharply and convincingly than ever before when it opened in 2010 at the back of a boutique inner-city hotel. The place made a big impression on clued-up locals and critics straight away, but its impact was felt further afield – the following year it clinched the number 13 spot on The World’s 50 Best Bars list, thrusting Australia’s cocktail scene into the global spotlight. Truckloads of international awards followed and, before long, every second gin joint in town seemed to be channelling the 1920s and specialising in a brand of over-the-top bartending.

In 2020, the venue’s 10-year lease came to an end, but Eau-de-Vie has made a triumphant return to the Harbour City right where you’d expect to find it – down several flights of stairs behind an inconspicuous door on an unassuming laneway off Wynyard Station. You can’t keep a good bar down for long.

Why you stayTime pretty much comes to a halt down in this classy, clubby, low-lit bolthole where the mood seems eternally set to late night. Once your eyes adjust to the amber glow and the jazz soundtrack seeps into your ears, thoughts about the outside world fade away fast. Then again, that could be the cocktails talking. As at the Darlinghurst OG, there’s a fair whack of blowtorching and liquid-nitrogen action happening, so you’re never short of entertainment. At its core, theatricality is what this place has always been about, and if the razzle-dazzle isn’t the reason you visit in the first place, it’s almost always why you end up sticking around. The creativity, expertise and professionalism underlying it all doesn’t hurt either.
What drink to orderWith upwards of 35 cocktails on the list, choice overload can set in real quick. Fortunately, drinks are broken down into categories like Tropical & Lively and Savoury & Spice to help ease the pain, and staff are happy to help steer the way. It’s hard to go wrong with a bracer from the Hall of Fame section, like founder and co-owner Sven Almenning’s Smokey Rob Roy – a blend of Scotch whiskies, Venezuelan rum, sweet vermouth and orange bitters that shows up shrouded in smoke and has long been a best-seller. For something lighter and brighter, try the Lady White Snake, a gin-based swizzle that sparkles with lemongrass, jasmine tea and boatloads of citrus. Should the urge to share take hold, a handful of drinks are designed for couples or small groups, like the Hollywood Bowl, which brings back the punch tradition in style by way of vodka, Italy’s bittersweet Aperol liqueur, pink grapefruit and rhubarb topped up with bubbles.

What to pair it withSure, you can order olives or pork scratchings to line the stomach, but the menu is much more considered than the usual nuts, cured meats and chips-and-dip routine. Yellowfin tuna tartare arrives dramatically presented in a carved-out bone, tossed through the marrow for creamy richness. The party pie gets a similarly luxurious upgrade in the form of a wagyu beef-cheek pastie with mushroom ketchup and the option to add shaved Australian black truffle. To finish, try the Foie-Rero Rocher, which reinterprets the much-loved Italian hazelnut chocolate confection with the addition of creamy foie-gras ganache.

Make it fancyIf you’re a whisky diehard looking to send it over the top, the back bar offers possibilities aplenty – more than 500, in fact, from tip-top distilleries the world over, including Suntory’s Hakushu outpost in Japan, Kentucky’s Willett, and Sullivans Cove outside Hobart. You can even buy a full bottle from the list and store it in one of the designated whisky lockers for future visits (price upon request, of course). And if dropping serious coin on dinner is more your speed, head up to sister restaurant The Sanderson for top-of-the line steaks and seafood in similarly cushy surrounds.
Who to takeNo two ways about it – Eau-de-Vie is a bar that’s tailor-made for drinkers with a keen interest in the cocktail craft (and money to burn on top). That said, the choice CBD location coupled with booths and big tables also make it a shoo-in for after-work drinks on the company card. And further back, the sexy, shadowy Whisky Room is a prime piece of first-date real estate.
