By now you’ve seen the photos, right? A sweeping room in pure white, crimson and gold. A grand spiral staircase. Bold curves and soft lighting. Tables by floor-to-ceiling windows and, beyond, the view of Sydney from 245 metres above street level ranging 260 degrees over the bridge, the harbour, the other bridge, the heads, the Royal Botanic Garden, east, west – all of it. This is Bar 83, in case you missed it – the retro-futuristic cocktail lounge on the 83rd floor of Sydney Tower leaning into the form of the structure and the era of its creation with nods to ’60s and ’70s design trends. A little space-age, space-odyssey edge is combined with something of the luxe airline lounges at the peak of the jet-setting era, and a whole bundle of kitsch, swinging energy. 

All this is to say that you go, first, to look at the place and snap the photo. But as much as a visit is about sinking into a sleek bucket chair or plush velour lounge and soaking up the view, this isn’t a tourist trap, and the drinks have been given as much attention as the décor. It may not revolve like Sydney Tower’s restaurant a couple of floors down, but the revolutionary spirit is alive and kicking, and the vibes are impeccable.

Why you stayWith sightlines like this, Bar 83 will always manage to pull a crowd. Keeping them around, though, is another thing. The plush touches and soft surrounds help – low lighting and the twinkling cityscape set an intimate atmosphere – as does the attention to detail with the drinks. This isn’t tourist-trap territory. Instead, you’re talking proper cocktails that look to the here-and-now of drinking trends, classic bubbles, a few magnums (in a section called Magnum Party, no less), wine that throws some natural gear in with familiar faces, and an all-local beer selection, barring one Japanese import that feels right at home when you think of Tokyo’s famed sky-high hotel bars. It’s not the most cutting-edge or niche, sure, but when so many destination venues get so much wrong, credit to Bar 83 for getting more right than it needs to, and letting the view complement the bar offering rather than prop it up. Time for another round.

What drink to orderIt has to be cocktails, especially if the sun is just starting to dip over the horizon. Start with a sweet-sour Euforia, a mix of gin with flavours of vanilla, pomegranate and lime, served in a coupe and garnished with fragrant basil. Or go the Helios Flair, a spiky, sunny number that offsets flavours of orange, passionfruit, mango and lime with chilli-infused tequila. Then it’s Champagne straight on for the evening.
What to pair it withThis is a menu that knows the hits and likes to play them, with just enough extra happening to keep you nodding along. Olives come warm and marinated, bougie East 33 rock oysters come with apple and chardonnay vinaigrette, caviar comes with warm crumpets. For bigger plates, think Italy’s creamy burrata cheese, lightly battered tempura zucchini flowers and coral trout, served as ceviche with tapioca crisps, and wagyu beef sliders served as a pair. Don’t sleep on dessert, either, where the cherry sundae is the pick, featuring Chantilly cream, spiced coulis sauce and mixed berries over vanilla-bean ice-cream. Sweet.

Why we love itThere’s a minimum spend here. In plenty of establishments this might be a no-no, but up on the 83rd floor of Sydney Tower, it means patrons aren’t just here for the view, but come ready to commit. That means less gawking and more people having a good time, so the standards need to stay high across the board to justify the outlay. Yes, that view is absolutely unrivalled, but the décor is just so deliciously, fabulously camp and one-of-a-kind. Everything has been thrown at this place, turning an already unique offering into even more of a landmark.

Regular’s tipIt’s all well and good to take a punt and hope you get your pick of tables, but as the sun starts to go down, the window settings become prime territory. While you can book ahead, the best way to ensure you’ve got dibs is to book the Sky High Seats, which guarantees you a spot for two fronting the view for a two-hour slot. Pay ahead and you can take your pick of three menus, with a bottle of Champagne, or other drinks of your choice, included with the ticket price.
Who to takeBringing your friends visiting from overseas is a no-brainer – what better intro to a city than to take it in all at once? The settings for two and golden, glowing lighting, meanwhile, make this perfect date territory. Still, the smooth lines, smart stylings and that stunning vista mean that Bar 83 has plenty to offer locals, too. If you haven’t taken the lift up to the top of Sydney Tower in your lifetime, now’s the time.
