NOW EXPERIENCING:Aster

This casual Melbourne bar packs a clever drinks list, with tasty takes on cocktail classics and low-intervention wines backed up by a tight list of creative snacks.

Cocktails are the drawcard at new Melbourne bar Aster
Why you goYou’ll find Aster where Ferdydurke once was, but the nondescript staircase off Tattersalls Lane that you’ve likely stumbled up or down over the past 12 years – and those prized balcony seats – are the only things that’ll feel familiar. Aster is a cocktail bar first and foremost. It’s a place where you go for a fancy drink and an unfussy vibe. A place with just enough flourish and fanfare to impress your date, and it’s also a place that’s primed for that nightcap with mates. It’s a versatile affair where the folks behind the bar will make you feel right at home – whether that’s with their spin on the Spicy Marg or a glass of something orange, skinsy and delicious.
What drink to orderCocktails come first at Aster, and you’ll find more than a few clever takes on classics. The Spicy Coco Marg is a clear front-runner for the first drink of the evening – and perhaps for the only drink of the evening, if you’re taking just one – where a healthy hit of coconut and sour grape makes this number shine compared with what you’d find on most menus around town. There’s plenty about the Mariacha that makes it a worthwhile order, too. It’s a tart and tangy number powered by grapefruit and apricot marmalade made with apricots from the tree next door following a recipe from the bar manager’s grandma. It’s a labour of love from the Aster team that happens to be a very, very tasty one.
What to eatSitting at around eight options, depending on the day, the food menu is a concise range of bar snacks designed to pair up with those cocktails, and they’ve got just the right amount of kook-factor. We’re looking at salami but with squid ink and black truffle, and a terrine but it’s made with duck, pancetta and a little pistachio. And for the vegetarians in the house? All eyes are on the shiitake mushroom and lentil parfait, a textural symphony you likely won’t find at any other cocktail bar in Melbourne.
Regular’s tip When you’d visit Ferdydurke in days gone by, the first port of call was to check whether there were any balcony seats going. That ritual remains. The uninterrupted views of Tattersalls Lane and next-door bar Section 8 are hot property, and if you can lock one in, we suggest enjoying it with a glass of whichever orange wine is on pour during the early afternoon – which is when you’ll need to get there if you want that seat.

Don’t leave withoutExplore the cocktail list to its fullest. The team at Aster can whip up a classic to a Melbourne standard, but there’s an adventure to be had in every one of the signatures. The Basically a Salad tastes like what it says on the label thanks to a little beetroot sweet vermouth and a fruity Flor de Caña rum. The Un-named Whisky Cocktail, meanwhile, brings together several big names in the game in one glorious glass – a must for fans of Johnnie and Australian label Starward.
