About the cocktail
It’s tempting to think of frozen cocktails as a uniquely summer trend, and it makes sense. The weather heats up, so, naturally, you want something to cool you down. But friends, we’re here to tell you that frozen cocktails are a whenever-you-feel-like-it kind of drink. Much like ice cream – you wouldn’t turn down a scoop of Death by Chocolate just because it’s a bit cooler outside, would you? The same goes for our next cocktail, the Frozen G&T. Created by the legendary Rob Libecans, the Frozen G&T is everything you love about a tradish G&T, just frozen and a touch sweeter. But first, let’s meet our cocktail guru and all-round legend, Rob Libecans. Rob’s the co-pilot, co-owner, and co-creative mastermind behind the award-winning Caretaker’s Cottage – Melbourne’s favourite (and charmingly small) pub. Rob’s been a mate of ours for a while now, most recently crafting the Rumble for all our cocktail enthusiasts at home. Just like the Rumble, Rob’s kept things simple with this Frozen G&T, with just three ingredients. "I love it because it’s so easy to make at home," he says. “Think of it as a twist on the Sgroppino cocktail,” explains Rob. “Instead of the prosecco and vodka, we’re subbing it for tonic water and gin.” The result? A cocktail that is, in Rob’s words, “sharp, sweet, bitter and fluffy”. Sounds pretty good to us, but, best of all, this three-ingredient cocktail is super easy to make. Just gin, tonic water and sorbet. “It’s impossible to make a bad version of this drink,” explains Rob. “So, just experiment.” Wondering what you should be eating with this bad boy? “Anything,” says Rob. “Like a Sgroppino, the idea for this drink is to untie your stomach after a big meal.” A perfect palate cleanser after a big lunch, in place of, or just before, dessert, the Frozen G&T is light, fragrant and sour, but sweet enough to satisfy that little after-meal-sweet-treat craving. All that’s left is to throw on some sick tunes, and for Rob, that’s “any Italio disco!”

Ingredients
30mL gin
50mL tonic water 2 large scoops lime sorbet Ganrish: Lemon zest
Method
Add the gin, sorbet and tonic water to a bowl Whisk it all together until any lumps have disappeared and it’s a smooth mix Pour it into a chilled glass Grate some fresh lemon zest on top to garnish
Rob’s top tips
As Rob says, there’s really no way to mess up this cocktail. Either way you spin it, it’s going to be delicious. What we would say is that because there are so few ingredients in this cocktail, their quality really does matter. So, make sure you’ve got a cracking gin on hand, some nice beady tonic, and a top-notch sorbet in the freezer. If you're not keen on the manual labour of whisking, you can chuck it in a blender and give it a whizz. Just don’t over-blend it – we still want that nice fluffy, icy texture to the drink. Lastly, if lime sorbet isn’t your thing, feel free to swap it out for any sorbet you fancy. “Mango is my go-to for the summer months,” says Rob. “But the sky’s the limit.” You’ve got permission to go ham, or maybe take a tip from your Gin and Tonicas and try matching the sorbet to a botanical in your gin. Rocking a London dry with a big lemon citrus peel punch? Try lemon sorbet. Does your gin have more of an orange twist? Go for orange sorbet. Want to get fancy with a pink gin? Opt for raspberry sorbet. Have a go – there are no wrong answers.
