When it comes to delivering sweet, exotic and instantly recognisable tropical flavours, pineapple is up there with the best of the summer fruits. And if you’re anything like us, these are exactly the kind of flavours you like to find in your drinks. Sweet but tart, acidic but juicy, pineapple brings so much to a cocktail, whether that’s in a creamy, icy, spicy, strained or fizzy mix. And we love any excuse to stick a wedge of pineapple on the side of our glass for a tasty edible garnish, too.

1. Pineapple and Coconut Margarita cocktail recipe

If the Margarita and Piña Colada had a lovechild, this cocktail would be it. This has the makings of a Tommy’s Marg, with tequila, lime juice and agave syrup, but the addition of coconut milk and pineapple juice takes it into delicious crossover territory that really works. This is the drink for lazy afternoons with friends in the backyard or a great pre-dinner cocktail to serve to guests on arrival. Fruity, fresh, creamy and delish.

We love a good hack, and the Fizzy Colada is one of our favourite ‘cheat’ cocktails in our collection. It’s fresh and tasty, but also incredibly easy with just a few ingredients, including one that might surprise. Pineapple Cruiser does the heavy lifting here, mixing with white rum, lime juice and coconut water. Think of it as a Piña Colada lite, or just a super simple mixer that’s sure to win everyone over this summer.

3. Pineapple and Gin Punch cocktail recipe

If doing the maths to batch up a cocktail isn’t your idea of a good time, go for a recipe designed for a crowd. The Pineapple and Gin Punch serves 12, so it’s one of the best party pours we know. There are a few ingredients to this gin-based cocktail, but it all just gets simply mixed in a jug or a punch bowl with ice, mint and sliced lemons, and then everyone can help themselves.

Pineapple and chilli are made for each other, and this riff on the Marg confirms it. Tequila, lime juice and sugar syrup form the base, while pineapple juice brings a fruity tang, and a dash of hot sauce (we all have our favourite) delivers a spicy kick. It’s light, refreshing and zingy, but with a little complexity from that heat. You can never have too many Marg twists in your arsenal, and this one is best in class.

The Daiquiri is one of the most underrated cocktails. A balance of just three ingredients – rum, lime juice and sugar syrup – the Daiquiri achieves a lot while also being so damn simple. Purists might argue this classic cocktail is best left here, but we’re adding a splash of pineapple juice to take this to the next tropical level. It’s fresh, classy and great for a hit of summer, even in the dead of winter.

Yes, we love the OG Piña Colada, but this icy non-alc version deserves a place on this list. Simply blitz up pineapple juice, sugar syrup, fresh lime juice and a zero%* rum spirit with ice, and you’ve got a smooth, creamy, slushy treat that everyone can enjoy. This is a drink that demands a high-impact glass – a hurricane glass is ideal – and we also recommend going all out on the garnishes for the full experience.

7. French Martini cocktail recipe

The French Martini is worlds away from your classic gin-vermouth Martini, but it’s also bloody delicious. This is an excellent cocktail for those who prefer their drinks on the sweeter side, although there’s plenty of tang to balance it out, too. Vodka and Chambord combine in a shaker with lime juice and pineapple juice, which helps to give it a frothy top. It tastes as pretty as it looks.

10. Chartreuse Swizzle cocktail recipe

Is there a better name for a type of cocktail than a Swizzle? We don’t think so – not least because it explains exactly how you’re meant to make it. This complex cocktail mixes Green Chartreuse and falernum with pineapple juice and lime juice, which all creates a tropical refresher with a solid herbal kick. Crushed ice brings resort vibes, which are further sealed with a pineapple wedge and cherry as the garnish.

Daiquiris aren’t all summery refreshers – the Hotel Nacional is a deeper, darker riff that’s sometimes referred to as a ‘winter Daiquiri’. There’s still all that pineapple goodness we’re after, as well as lemon juice for some zing, but dark rum and apricot brandy bring depth and richness to what is a very versatile cocktail. It’s a Cuban classic that gets shaken and strained, and you can’t forget that pineapple wedge as the garnish on the glass.

One of the great tiki-inspired cocktails, the Bahama Mama is all bright, tropical flavours and OTT garnishes. Just how we like it. A unique mix of Jamaican rum, coconut liqueur and coffee liqueur comes together surprisingly well, then gets mixed with lemon juice and that all-important pineapple juice to bring the fruit sweetness. It’s zippy and bright, and easy to make, with everything thrown into a cocktail tin for a quick shake.
