An easy recipe for everyone’s favourite Christmas cocktail.

About the cocktail

Though its origins are still disputed, one thing is certain: eggnog is one of the most recognisable holiday drinks there is. It can be enjoyed anytime you’re after a sweet ’n’ spicy dessert-style cocktail treat, so don't feel like you have to wait for Christmas to roll around either.

Eggnog is, admittedly, a somewhat strange creation. Egg, milk, cream and...rum? But don’t be put off – it really does have a certain charm about it. It’s thought that Eggnog was created in Europe, perhaps as early as the 13th century, with sherry eventually becoming the spirit base. It was drunk by the upper-class to toast good health and good fortune, then exported to the Americas with the British colonists. Given rum was so widespread in the Caribbean, it became the Americas’ go-to spirit for a batch of Eggnog.

Want to know just how popular Eggnog became? George Washington is said to have had his own recipe, which combined brandy, rye whiskey, rum and sherry with cream, milk and a dozen eggs. Safe to say, ours is a little less intense. The recipe differed from region to region, too, with southern states preferring whiskey to rum, while Peruvians took to adding the local pisco to their concoction.

Ingredients

  • 700mL full cream milk
  • 240mL thickened cream
  • 1 tablespoon vanilla essence
  • 3 cinnamon sticks
  • 1 teaspoon grated nutmeg, plus more for garnish
  • 5 eggs, with yolks and whites in separate bowls
  • 130g white sugar
  • 175mL rum

Method

  1. Add milk, cream, vanilla essence, cinnamon and nutmeg into a saucepan
  2. Gently simmer, being careful not to boil, then allow to rest and cool
  3. In a separate bowl, add five egg yolks (don’t discard whites) to the sugar and beat together. Slowly stir in the milk mixture
  4. Add the rum to this mixture and slowly stir to combine 
  5. Add the egg whites to a new bowl and beat until fluffy
  6. Gently fold the whites into the mixture 
  7. Refrigerate, then serve in glasses when needed 
  8. Garnish with a sprinkle of nutmeg

Dan’s top tips

This recipe can be easily adjusted to become non-alcoholic – just leave the rum out. And if you need a mixture of alcoholic and non-alcoholic Eggnog? You can pour the rum into individual glasses, topped up with the Eggnog. It doesn't have to be rum, of course. The recipe is a very personal thing and can be changed to suit your tastes. Whether it’s rum, whiskey, pisco, or Cognac, they’re all valid additions to your favourite holiday cocktail.
