It’s creamy, it’s fancy, it could cameo on Bridgerton if it really wanted to – it’s the decadent cocktail from our friend Alice Bennett (AKA Miss Trixie).

About the cocktail

Sugar and spice and all things nice are just a few words we’d use to describe our beloved cake queen, Alice Bennett. Self-taught and unbelievably punny, Alice (AKA Miss Trixie) is famous for her flamboyant, mouth-watering cake creations (don't believe us? Check out her Instagram here). In true Dan’s fashion, we just had to get Alice’s take on a cocktail, and boy has she delivered. Please welcome the one-of-a-kind, vanilla cake-like sensation: the Amaretto Sundae Stir cocktail.

But before we introduce you to her masterpiece, let’s get to know our new bestie – starting off with the most hard-hitting of questions: Kiss, marry, kill – lamingtons, pavlovas, fairy bread? “Well, I would kiss fairy bread – it’s clearly down for a good time.  I’d marry lamingtons, my great bakery love, and I’d kill pavlovas; I hope I’m not hated for killing off the unofficial dessert of Australia!” Alice says. Brave. Controversial. Soz pav.

With that out of the way, we asked some more bakery-inspired questions. Like, what’s the first thing you ever baked? “I can’t quite remember the first thing I ever baked, but I was always shadowing my mum in the kitchen – she was always very happy for me to have a go and try new things,” says Alice. “I do however remember baking scones very regularly – including making my own TV episodes on how to bake them. I also very clearly remember accidentally adding ¼ cup of salt to one batch and no one eating them. Hopefully, I’ve improved on the measurements since then!” Adorable!

Now for our joint creation, one that is definitely not cake (but sort of tastes like one) the Amaretto Sundae Stir. Yum yum! This “creamy, sweet and lip-smacking” (Alice’s words) sundae-styled drink is a riff on the Alexander cocktail and is super easy to make and super delicious to drink. It’s definitely one for all the sweet-tooths in your life.

So, why this cocktail and what’s the inspiration? “My day in the kitchen! We’ve taken some of the key flavours I use in the kitchen and brought them together in cocktail form. I use ingredients like vanilla, cream and almonds on a daily basis, so I love seeing these as the shining stars in this drink.”

We’re sold. Now it’s your turn to start banging the pots and pans around (figuratively, not literally). But before we sign Alice off for the day, we’ve got one super important question to ask. Fondant: bop or flop? “I’m a buttercream queen! You know my thoughts.”

Ingredients

  • 2 tsp mascarpone
  • 20mL cream
  • 10mL maple syrup
  • 20mL Irish cream liqueur
  • 20mL amaretto
  • 20mL vanilla vodka
  • Garnish: grated nutmeg and fresh cherry

Method

  1. To a cocktail shaker, add all ingredients (aside from the nutmeg and cherry – those are for garnishing!)
  2. Shake vigorously without ice for around 20 seconds
  3. Now chuck in your ice, shake it again, and strain into a large coupe glass
  4. Garnish with a light grating of nutmeg and a fresh cherry on the edge of the glass. Yum!

“Make double as you’ll want more than one. And absolutely opt for freshly grated nutmeg, rather than pre-ground nutmeg. There’s something really satisfying in grating a sprinkling of nutmeg to finish the cocktail off just beautifully!”

Lastly, if you’re wondering when to serve and what to pair with this creamy cocktail, we both reckon it’s a dessert affair. “Would absolutely serve this gorgeous cocktail with dessert. I think it would go PERFECTLY with a sticky date or golden syrup pudding – it could be the cream substitute!”
