The Baileys White Hot Chocolate is a sweet and indulgent cocktail

Deliciously smooth, incredibly decadent and oh-so creamy! Don’t sleep on the Baileys White Hot Chocolate.

About the cocktail

Baileys shouldn’t just be reserved for Christmas. If you’re the type who bought a bottle to use in a tiramisu and its since been gathering dust at the back of your pantry, let us shake you out of that behaviour right now. 

Firstly and most obviously, it’s scrumptious and super delish in our Baileys White Hot Chocolate (we’ll get to that in a hot second). Secondly, Baileys is actually really freaking cool. They’re B Corp-certified, they’re all about renewable energy, they work with farmer-owned cooperative dairy suppliers and they make sure all their dairy cows are happy and healthy. Plus there’s plenty of delicious ways to use that bottle of Baileys. A classic, yes, but they’ve kept with the times. And lastly, Baileys is made of Irish dairy cream, choccy, vanilla and Irish whiskey, so, what’s not to like?

How do we utilise this creamy liqueur? In our Baileys White Hot Chocolate, of course. It’s a delicious and sophisticated mix of white chocolate, nutmeg, cloves, orange peel, spiced rum and, of course, Baileys. Perfect for a winter warmer, sipping around a campfire or a little sweet treat before bed.

Ingredients

  • 90mL milk
  • 60 gm white chocolate (diced)
  • 1 tbsp white drinking chocolate
  • ¼ tsp nutmeg
  • 1 tsp cloves
  • Peel of ¼ of an orange
  • 40mL Baileys
  • 20mL vodka or spiced rum (optional; if omitting, increase Baileys to 60mL)
  • Garnish: a light dusting of nutmeg
  • Glass: heat resistant tumbler or coffee mug

Method

  1. Fill your heat-resistant tumbler or coffee mug with boiling water to warm it up – this ensures it’s nice and hot when you pour the finished cocktail in to retain that heat for longer
  2. Add milk, white chocolate, white drinking chocolate, nutmeg, cloves and orange peel to a small saucepan over low heat, slowly warming and stirring until the chocolate is melted
  3. Once melted and the liquid is hot, remove the saucepan from the heat
  4. Discard the water from your mug and add Baileys and vodka or spiced rum (if using)
  5. Strain the spiced white hot chocolate mixture into your mug (we don’t want the cloves and orange peel in the finished drink)
  6. Garnish with a light dusting of nutmeg on top

Dan’s top tip

The Baileys White Hot Chocolate is a drink you can adjust to taste. Not a fan of spiced rum? Omit and sub for vodka. If you prefer it on the lighter side, don’t worry about adding a hard spirit to the mix at all, just use Baileys. Freaking HATE nutmeg? Don’t fret – it’s not necessary. Try cinnamon or cocoa powder instead. 

But what you can’t do is fire up that milk too hot too fast. It’ll boil over quickly, develop that creepy skin, and create a giant mess. Keep it low and stir it gently, so the milk doesn’t go haywire. 

If you do like nutmeg, don’t overdo it. Nutmeg has a powerful flavour; once too much is added, your brew is hard to get back, so make sure it’s only a dash or two. 

Lastly, we want this little hot choccy to stay exactly that, HOT, so preheat your drinking vessel before pouring in your drink. Do this by adding some boiling water to your cup first and letting it sit. Pour out the boiling water before straining your Baileys White Hot Choccy in.
