How to use that leftover bottle of Baileys

You bought some for Christmas Day, and now you don’t know what to do with it. Try these delicious recipes featuring the world’s favourite liqueur.

Some may equate cream liqueur with the god-awful flavoured shots of the '80s – the Slippery Nipple, Russian Quaalude or Screaming Orgasm (what were our parents thinking?). Thimble-fulls of layered liqueurs that are either so sweet or so sour they make your face pucker and your insides twist. Baileys, one of the world’s most famous cream liqueurs, you may have encountered as the always half-full bottle stored in the back of your grandparents’ pantry, briefly re-emerging for Christmas and Easter dinners. But we are firmly here for the Baileys renaissance! Firstly, it’s ridiculously delicious. Secondly, it’s versatile. And thirdly, the Baileys team are running a super environmentally progressive business. Three things we can certainly get behind. 

We’re here to set the record straight, with a little insight on the liqueur itself and all the delish things you can make with it (strictly no nipples – slippery or otherwise).

What is Baileys?It all started in 1974 when a group of farmers decided to take two of Ireland’s most beloved exports, whiskey and cream, and blend them together in one luscious beverage (having their cake and drinking it too). After a few years of trial and error, the founders of Baileys settled on a recipe of cream, vanilla, chocolate flavouring and whisky (plus some other secret ingredients) – a big feat considering cream usually curdles when added to whiskey. Nowadays, Baileys – owned by liquor giant Diageo – is one of the highest-selling liqueurs in the world.
What you didn’t know about BaileysWhile the above may not have come as news to you, what you may not have known about Baileys is that it's actually B-Corp certified. We’ve talked about B Corp certification before, but what we need to stress to you is that it’s a huge accomplishment. To become a B Corp-certified business, you need to adhere to three main principles: high social and environmental performance by achieving a B impact assessment score of 80 or above, transparency, and accountability to all stakeholders and shareholders. It requires years of dedication and a lot of investment to successfully acquire and maintain B-corp certification – which would be particularly tricky for Baileys as they require fresh cream and dairy farming for their production. So, what specific actions has Bailey’s taken to ensure they’re B-Corp certified? Well, since 2008, all Baileys operations have run on 100% renewable electricity with an aim of reaching net zero by 2030. They’ve also reduced the water used in production by 29% and, of course, their supplier dairy farms (which are all family-run) use free-roaming, grass-fed dairy cows, closely monitoring their stress levels, to make sure they’re the happiest they can be. That’s pretty damn impressive. So now that we’ve talked it up, how can you use Baileys?

How to use Baileys in cocktails

You can drink Baileys neat over some ice like your grandparents did back in the day, or you can have a bit of fun with it and mix it up in these cocktails. There are a tonne of creamy cocktails you can pick from, but here are a few of our faves, starting with the could-be-subbed-for-dessert cocktails. A seriously decadent blend of coffee, hazelnut, Bailey’s Liqueur, ice cream and chocolate sauce served in a hurricane glass, the Toblerone is a sweet tooth’s dream. You can drink it in place of dessert or, if you’re that way inclined, served alongside. Almost identical is the Mudslide cocktail, which subs the ice cream for double cream and omits the hazelnut liqueur. If you’re after a bit more chocolate and a little less cream– then the Chocolate Temptation is perfect. Lastly in the drinkable dessert category, we have Miss Trixie’s (AKA Alice Bennett) Black Forest Caketail – a delightful cherry-flavoured drink that mixes chocolate Baileys, cherry wine and cream.

If you’re looking for a more refined Baileys cocktail, adding the liqueur to a classic might be more your speed. For example a variation on a White Russian, where you can sub out the cream for Baileys. Another great variation is the Irish Alexander, which is a delicious twist on a Brandy Alexander recipe cocktail. Just sub out the creme de cacao for Baileys. Lastly, pro tip: add 15 mLs of Baileys to your Espresso Martini recipe to give it a richer, creamier consistency. Hedonists unite!

How to use Baileys in foodCooking with Baileys is a no-brainer. It's a super easy win to add flavour to your desserts and can be added to heaps of different foods (think cheesecake, chocolate mousse, trifle and cupcakes). Or literally just drizzle it over your dessert as a sauce – we’re all about working smarter, not harder. Our fave move is to add it to affogato or tiramisu. In an affogato, just chuck 45mLs of Baileys in alongside your coffee for a sweet, vanilla twist. And in a tiramisu, combine 3/4 of a cup of Baileys with the espresso you use to soak your ladyfingers.
