The hint of acid and alcohol drive checked by the embrace of that deep-delved fruit richness. More balance, with minions of covert tannins barely seen and hardly heard, but there.

Game. Spicy Chinese Quail. Sausage and horseradish. A black bean stew with a pork spare rib. Anything with too much pepper, or a hint of chilli. Whilst this is a gentlemanly Barossan red, it still knows where it is from.

Opaque core into a deeply staining purple rim. Mulberry, vanilla oil and sawdust aromas. Black fruits fill the palate, layered underneath the weighty concentration are graphite and wood shaving notes. Tannins are quite gravelly and drying and pinch the finish slightly. Time should see it unwind its current tension.
