In 2021 the fruit showed greater intensity and minerality than the previous vintage. Each parcel was picked separately and destemmed into open-top tank for fermentation, chilled down then allowed to warm up and naturally ferment using indigenous yeasts. All three parcels were fermented separately. The ferment was gently hand plunged two to three times daily for approximately 7-8 days. Then basket pressed and all blocks blended together and filled directly to USA & French oak (15% new) with natural malolactic fermentation, then followed by a minimum 18 months maturation in barrel. The wine was racked once (after MLF completed) during this 18 months and then bottled unfiltered.
This wine as usual has amazingly deep colour and density, notes of cedar and blue and red berries. The palate has initial blueberry fruit (a hallmark of this wine) with mouth-watering juiciness, finishing smoothly with great chalk-like tannin structure. All too easy for now but is also built for a bit of a long run in the cellar.
