The machine harvested fruit was given skin contact for 24 hours to gently extract skin phenolics. After pressing, half of the juice was settled to a high level of clarity for innoculated tank fermentation. The remaining half was transferred to old white puncheons with a higher level of solids for barrel fermentation using wild yeast. The two portions were blended before bottling without fining on 11th September 2019.
Our 2019 Heathcote Fiano has a medium straw colour with green tints. The nose displays intense aromas of yellow pear, apple and spring blossom. The palate reflects the warmer vintage, with ripe fruit up front, a beautiful textural component derived from the skin contact, and a deliciously long finish.

The combination of texture, flavour and length here is a winner in anyone's books. It's pulpy and ripe but it plays savoury cards and smoky barrel-induced ones too. It wouldn't be far-fetched to call this compelling.
