Violets, roses and blackcurrants pervade through the wine like an English country garden. The tannins are especially fine grained and there is a beautiful freshness and mineral quality on the palate. The parcels of fruit are batch vinified in stainless steel tanks before maturation in 100% new oak for between two and three years.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.
Dry wines have no trace of sweetness at all.

Includes 4% of each of cabernet franc and merlot, and 2% petit verdot. Very concentrated colour - deep and dark and still retaining a lot of purple. Intense and very ripe smelling within the cool-climate context. Some mint together with cedar, blackcurrant and traces of leather and coffee. The tannins are ample and ripe. A big, powerful cabernet, not the most elegant, but certainly has concentration and substance. This is quite an achievement for cabernet in Tasmania!
