Deep crimson. Intense inky dark cherry, cassis, blackberry aromas with dark chocolate herb garden notes. Generous dark cherry, blackcurrant, blackberry, dark chocolate flavours, fine dense gravelly tannins and well-balanced marzipan, vanilla oak notes. Chocolaty firm at the finish with bittersweet cedar/ chinotto notes. Elemental wine that should fold into shape with a few years of bottle age. But very good volume, density and fruit sweetness. 85% cabernet sauvignon, 15% shiraz. Drink 2026 – 2040 14.5% alc

Bin 600 is intrinsically linked to Penfolds beginning in California, a narrative that now spans three decades. In 1998, Penfolds imported a heritage selection of vine cuttings from South Australia’s esteemed Kalimna and Magill Estate vineyards and planted them in Californian soil. A blend that balances elegance and depth, the 2021 Penfolds Bin 600 Cabernet Shiraz presents a deep ruby hue. On the nose, it offers an intriguing combination of rum raisin with red and dark fruit profiles, while the palate reveals extracted plum, blueberry, and bramble notes. Initial flavors of sweet plums and blackberries lead into ripe tannins, though the high alcohol content requires time to integrate fully. While enjoyable now, it promises further complexity with aging. Pair this wine with dishes like grilled lamb chops with a minted pea purée
