Crushed and destemmed, cultured yeast, matured in new and used American and French oak for 18 months. This is the type of wine that has supported the cause of McLaren Vale cabernet over the decades; the fruit is half cassis, half blackcurrant, it is juicy, yet retains texture and structure, and bitter chocolate/black olive notes add flavour complexity; its tannins are also on the money.
