Medium to full brassy copper-salmon-pink colour, the bouquet showing a suggestion of volatile acidity which smacks of varnished timber. There's seemingly an oaked component. The wine is very piercing and intense in the mouth, partly due to its acidity. The dryness of low-dosage and the apparent wood influence adding to its dryness and austerity. It's a punchy wine that really begs for food accompaniment. (Disgorged 10/2018)

I do like pink sparkling wine and this is a cracking good example of the style. It's from Mount Barker pinot and it saw a little time in oak and stainless steel before ageing for 24 months on lees, a key part of the process to build complexity and texture into the palate which it does beautifully. Creamy strawberry fruit with a hint of brioche.
