Bryan didn’t make a Hilltops Nebbiolo in 2020, so the 2021 is a welcome return. Sourcing is from the Bit of Heaven and Grove vineyards in Tumbarumba. The fruit is fermented and left on skins in ten-hectolitre oak cuves for eight months. The wine is then pressed back to cask and transferred to foudre for a further 12 months before being bottled in May.
