Marshall Shiraz

Shiraz was made from estate grown fruit harvested in the cool of the night (we hired a saxophone players to play Careless Whispers all nights to the grapes) and fermented in open fermenters at low temperatures to ensure the delicate aromatics were preserved, as well as using a blend of cultured wild yeast strains to give a lovely fine structure. Aged in seductive mature French oak barrels for 15 months and bottled without fining.
