Another fine product from the experienced hands at Blue Pyrenees. We always like to see good bubble action in sparkling wine. This has an exemplary fine bead with loads of energy. Made from fruit sourced in cool climate areas, and from the three classic sparkling wine varieties, both complexity and finesse abound. Citrus, crisp apple, floral notes and fennel, along with bread and a food-friendly phenolic touch make this snapping fresh bubbly a great all-rounder.

Light to medium-yellow colour, with a fresh yeast and raw herbal bouquet, very youthful smelling, fermentation yeast rather than autolytic yeast. Straightforward flavour, a basic wine with a trace of bitterness high on the back-palate.
