Mushroom Tortellini
Fresh and earthy mushrooms sing in this rich, creamy dish.

Ingredients
- 2 cups fresh cheese tortellini
- 1 tbsp olive oil
- 100g fresh porcini mushrooms
- 2 garlic cloves, sliced
- 1 cup water
- Coarse salt and ground pepper
- 3 tbsp grated Parmesan cheese
- 1 tbsp butter
- 2 tbsp sour cream
- A good pinch flat-leaf parsley, finely chopped
Method
- In a large pot of boiling salted water, cook tortellini until tender, around 7 min, drain.
- In a large pan, heat oil over medium-low heat. Add mushrooms and garlic, cook, stirring frequently, until mushrooms are tender.
- Add 1 cup water, season with salt and pepper. Cook until liquid is reduced by half, about 5 minutes. Remove from heat; add tortellini, Parmesan, butter, sour cream and parsley. Toss to coat, serve.
