Mushroom Tortellini

Fresh and earthy mushrooms sing in this rich, creamy dish.

Ingredients

  • 2 cups fresh cheese tortellini
  • 1 tbsp olive oil
  • 100g fresh porcini mushrooms
  • 2 garlic cloves, sliced
  • 1 cup water
  • Coarse salt and ground pepper
  • 3 tbsp grated Parmesan cheese
  • 1 tbsp butter
  • 2 tbsp sour cream
  • A good pinch flat-leaf parsley, finely chopped

Method

  1. In a large pot of boiling salted water, cook tortellini until tender, around 7 min, drain.
  2. In a large pan, heat oil over medium-low heat. Add mushrooms and garlic, cook, stirring frequently, until mushrooms are tender.
  3. Add 1 cup water, season with salt and pepper. Cook until liquid is reduced by half, about 5 minutes. Remove from heat; add tortellini, Parmesan, butter, sour cream and parsley. Toss to coat, serve.
