Ingredients

  • 4 tsp butter
  • 2 slices rye or sourdough bread
  • Slices of ham
  • Small handful baby spinach leaves
  • Few slices of gruyere cheese
  • Dijon or hot English mustard

Method

  1. Heat 2 teaspoons of butter in a small non-stick frypan on medium heat.
  2. Spread butter on one slice of bread and place butter-side down on the pan. Add a layer of ham, then spinach and then cheese.
  3. Spread some mustard on the other slice of bread and place on top of the sandwich.
  4. Spread butter on the other side and use a spatula to gently flip over.
  5. Cook until the cheese melts and both sides of the bread are nicely browned.
