Charred Corn With Mexican Butter
Chilli, lime, and jalapeno give this chargrilled corn a zesty kick

Ingredients
- 6 tbsp butter, softened
- ¼ tsp chilli powder
- ½ tsp lime zest
- ½ tsp jalapeno, minced
- 1 tsp fresh lime juice
- 6 ears corn, in the husks
- Salt and pepper to taste
Method
- Create Mexican Butter by placing the butter in a small bowl. Add the chilli powder, lime zest, lime juice, jalapeño, and salt and mix well. Cover and leave at room temperature.
- Heat bbq grill to medium.
- Place corn (in husk) on the grill, rotating the corn so you cook on all sides, for approximately 15 minutes total.
- Remove from grill and cool slightly, peel.
- Place corn back on grill over the same flame for about 4 minutes, rotate for even grill marks.
- Serve the corn immediately with the Mexican butter.
