Sardinas

Ingredients
Method
- Cook the red onion in the microware oven for 2 min until soft and transparent.
- Drain the sardines, keeping a tablespoon of the oil.
- Mix this with the olive oil and lemon juice and zest.
- Season with salt and pepper.
- Mix together to make a creamy dressing.
- Add the dressing to the beans, onion and parsley and toss together.
- Serve the sardines on top the bean salad.
- Serve with crusty chunks of bread.
