Food and Wine Matching - Sardinas With Cannellini Beans

Ingredients

  • 2 tins sardine fillets in oil
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • ½ tsp lemon zest
  • 400g tin cannelloni beans, drained and rinsed
  • 1 small red onion, finely sliced
  • 2 tbsp flat leaf parsley, finely chopped
  • Salt and pepper to taste
  • Method

    1. Cook the red onion in the microware oven for 2 min until soft and transparent.
    2. Drain the sardines, keeping a tablespoon of the oil.
    3. Mix this with the olive oil and lemon juice and zest.
    4. Season with salt and pepper.
    5. Mix together to make a creamy dressing.
    6. Add the dressing to the beans, onion and parsley and toss together.
    7. Serve the sardines on top the bean salad.
    8. Serve with crusty chunks of bread.
