Minimalist gin bar Purple Palm channels Palm Springs for sunny inspiration. The indoor-outdoor  design makes the most of the balmy Brisbane weather and its back bar is exclusively Aussie.

Why you goIf you’re planning to open an al fresco gin bar, Brisbane is certainly the city for it. The Queensland capital boasts an average of 283 sunny days a year, and Purple Palm, a good-looking indoor-outdoor affair with trailing greenery and plenty of dark-framed glass and steel, is designed for good weather. It’s a relatively compact space, but it exerts a breezy, tough-to-resist charm for those seeking balmy sundowners or pre-dinner cocktails delivered in casually smart surrounds. Purple Palm is a joint venture for South Australian distillery 78 Degrees and the Talisman Group, an outfit that operates several venues at South City Square, including upbeat Peruvian-Chinese mash-up Casa Chow, Euro-inspired South City Wine Bar and Sasso Italiano. The owners reference California’s fashionable desert resort town of Palm Springs as the muse for this project. Arrive after dark and you’ll also see a purple-lit palm or two dotted around the place.
Why you stay

With growing awareness of the benefits of backing local, it’s good to know drinks at Purple Palm, right down to the Strangelove tonics, are Aussie made. The majority of spirits arrayed on the curved back-lit bar hail from 78 Degrees, though you’ll also find the likes of Husk Distillers from northern New South Wales represented, too, as well as Far North Queensland’s Mt Uncle. 

The space feels like a contemporary leafy conservatory. Orders can be placed via QR code from your table, but it’s also worth heading to the bar to chat to the friendly staff and find out about drinks such as the Salted Grapefruit Gin Cooler on tap. 

Set in the middle of a new shopping and dining precinct, Purple Palm’s atmosphere is ever-changing. You’ll likely find a much livelier crowd hanging out at the weekend, while during the week the ambience and soundtrack are set to melodic chillout beats. Groups should make a beeline for one of two U-shaped banquettes that bookend the space. 

What drink to order

There’s gin and tonic, and then there’s Purple Palm’s Aussie hat-tip to the drink: Ants in Ya Pants, a showcase for Seven Season’s native Green Ant Gin, with fresh lime and rosella syrup and finished with Strangelove’s Coastal tonic with subtle notes of thyme and bergamot. It’s among the six takes on the G&T. There’s no lack of inspiration on this list. There are half a dozen classic cocktails, all with Aussie twists – Tommy’s Margarita is made with Mt Uncle’s agave spirit in place of tequila – and the same number of variations on the Martini. A further six signature cocktails include Purple Palm’s version of the Negroni, AKA the Better than Your Average Negroni, a mellow take on the OG drink that features in-house barrel-aged 78 Degrees Better Gin with 78 Degrees house versions of Bitter Orange and Rosso Vermouth, and the Queensland-inspired Sunshine State Spritz, built around Sunshine State Gin, custom-distilled for Purple Palm, with mango puree and prosecco. 

Beers follow the local theme with the likes of Brisbane’s Slipstream, Ballistic and Aether breweries.

 

What to pair it withA handful of simple but flavour-packing skewers are the go here, although drinkers are welcome to organise more substantial takeaways from neighbouring Talisman Group operations such as South City Wine Bar or Casa Chow. Among the things on sticks, the version of the Gilda is satisfyingly classic – a punchy trio of olive, anchovy and Spanish guindilla pepper. Another skewer is generously loaded with Italy’s mortadella sausage and Spain’s Manchego cheese, while a smoky marinated artichoke number comes out showered in salted ricotta shavings.

Don’t leave withoutChecking out the Purple Palm’s mocktails – a clever way to pace yourself without getting FOMO. The choice of three, built around Lyle’s zero-alcohol “spirits”, might span a Virgin Negroni, Virgin Espresso Martini and a strawberry-infused take on the G&T with Lyle’s Pink London “gin”.
Make it fancyThe Australian 78, a $90 cocktail designed to share between four to six people, mixes 78 Degrees Classic gin with fresh lemon, a rosemary-infused syrup and a bottle of Dal Zotto sparkling wine. Consider it a local take on the more famous French 75, a mix of gin, Champagne and lemon named for a World War I field gun. This Aussie tribute will also hit the mark.
Who to takePurple Palm’s Gin, Juice and Disco sessions on weekends could be a whole heap of fun with the right group of mates. Just don’t bother bringing wine-loving friends – they’ll be better served at neighbouring South City Wine Bar – the vino edit at Purple Palm is functional rather than fabulous. This recently opened spot is generally a good call for tasty pre-dinner cocktails and catch-ups, and solo drinkers in search of a pick-me-up aperitivo will feel just as welcome as larger groups.
