This brand-new rooftop bar specialises in all things Mexican, from rare spirits to new spins on classic cocktails and a tight menu designed for easy-going snacking.

Why you goThis is one of the most exciting cocktail bars to have opened in Sydney for some time. Beautifully made drinks, bar staff who know what you need before you do, and a snack menu designed for ease of use all point the way to good times. All that, and it’s on the roof, alongside one of the city’s most attractive hotel pools. 
What drink to orderLottie bills itself as a mezcalería, offering at least 20 different types of the agave spirit on the menu. Feeling extremely adventurous? Try pechuga, an agave spirit with a surprise twist – it’s distilled with raw meat. Yup, raw meat. For something a little more familiar, there’s also a broad selection of tequila, from both the highlands and lowlands of Mexico. Cocktails are a must. Ever had a Batanga? It’s one of the more complex cola-based cocktails out there and comes care of the little Mexican town of Jalisco, birthplace of tequila. It straddles the line between savoury and sweet, bitter and sour, thanks to the mix of tequila, house-made cola, herbaceous Italian liqueur, and a squeeze of lime all served in a tall glass crusted in salt. There’s the requisite Spicy Margarita (ask for the Margarita Picante), combining blanco tequila, morita pepper, Mexican chilli, lime and agave syrup, and if you’re the designated driver, there’s the Marg-no-rita (Sammy Piquant’s zero-alc mezcal, agave and lime). Want to try a drink that’s both a little left of centre and super-fruity? Give the Chamoyada a crack. A take on the popular Mexican mango shake of shaved ice, fruit and chamoy sauce (a savoury, fruity, slightly spicy condiment found all over the country), here whipped up with aged white rum, grape spirit, salted coconut and passionfruit. It looks like a health drink, but tastes like the most luxurious holiday smoothie ever.
What to eatIt’s a short menu designed for snacking while drinking. Try chunky guacamole with a side of house-made tortilla chips and a trio of salsas, allowing you to tailor your spice levels with each dip of the chip. A brassica tostada sees blackened Brussels sprout petals, roast cauliflower florets, pickled onion and fresh cheese sitting on a bed of pumpkin seed paste, all on a crunchy tostada. Larger dishes include pork jowl cooked down to a gelatinous confection, whole roast Murray cod and a roast chook served with coriander salsa.

Make it fancyBook a night in the adjoining Eve Hotel. Rooms start at around $700 a night, which surely buys you the right to saunter from your lounge by the rooftop pool to prime position at the bar, White Lotus style.
Who to takeThere’s a cruisy vibe here, making the bar equally fitting for catch-ups with friends as cute date nights. Lottie trades all the way through from noon each day, so it’s also an appropriate spot for business meetings. The space is light-filled, the tables are comfortable, and staff know when to appear and when to give you space. Entertaining clients? The drinks list is dressed to impress.
