Letra House is one of the best new bars in Sydney

At this moody basement wine bar in the city centre, a veteran team smashes out classic Spanish eats with Australian flair alongside one of the city’s most intriguing wine lists.

Why you goSince it opened, pasta paradise Palazzo Salato has sat on top of a big, empty basement and co-owners Matthew Swieboda, Nathaniel Hatwell and Scott McComas-Williams have scratched their heads wondering what to do with it. Inspiration struck in the form of a Spanish-influenced wine bar, one that leans into the dark, moodiness of the building’s bones. You have to look hard to find Letra House, which always makes you feel like you’re heading somewhere a little bit secret and special, and stepping over the rough heritage cobblestones is a reminder that you’re going somewhere with character and soul. Inside you’ll find a long bar, brooding brick walls and a team that’s smashing out Spanish classics with Australian flair alongside one of the city’s most intriguing wine lists.
What drink to orderIf you’re the type who prefers a wine list to be short, familiar and easy to navigate, Letra House is probably not for you. But if you like nosing around in a large – and exciting – list that bounces around the globe like a pinball machine, then this is right up your (cobblestoned) alley. There are 50 bottles on the list at any time, each carefully selected by Matt and head sommelier Julie Barbero-Lesage, and you could return every day and barely make a dent in things (not least because the dynamic list changes constantly). On one visit you might dive into a Lebanese cabernet sauvignon, the next you could put away a Barossa muscat-sémillion blend or a Hungarian furmint. To make your decisions a little easier, most bottles are also offered by a glass or half-bottle so you can mix and match. There’s also a solid sake and beer list, and a range of creative cocktails like a house Negroni made with strawberry and basil, and a Spritz that shivers with yuzushu and salted passionfruit.

What to eatLetra House gives off strong wine-bar vibes – the central bar and cracking wine list make sure of that – but the food menu is so weighty that there’s no reason to head anywhere else for dinner. Everything sits within the Spanish sphere, such as a tostada topped with a trio of bright scarlet red carid prawns and a freckling of paprika, or a squid and pipi soccarat (that crisp delicious bit on the bottom of a paella). Perhaps best of all there’s a separate late-night dining menu that includes all sorts of Spanish tinned things, and a selection of French and Spanish cheese. 
Don’t leave withoutDo you like fonts? Specifically diminutive, spare, blockish (if occasionally hard-to-read) fonts that you’ll never find in a newspaper or on public signage because they are a bit too clever and tricky, but nonetheless fun to admire? Then you’ll like the art direction of everything you see around Letra House. The branding and letter work are by Jarmaine Stojanovic from Sydney design firm SCCO and typography firm Letraset (which is also honoured in the bar’s name), and you’ll see it on the menus, the signage at the entryway and on the venue’s website.
