Why you goZooming to the top of South Yarra’s shiny Goldfields House building and stepping out of the elevator onto the 24th storey, the allure of its all-day rooftop bar and restaurant is immediately apparent. At golden hour, when Beverly really comes to life, the sun streams right through the place and into the lobby, where someone is waiting to escort you to your table. It was inspired by LA’s famous rooftop bars – and named after one of its most expensive and exclusive neighbourhoods, Beverly Hills – and there’s certainly an air of that ritziness to this new Chapel Street hotspot. But the overall vibe is easy-breezy, with a little extra polish. The curved room is bordered by floor-to-ceiling windows, making it all about the view. And the suave design of pastel-hued and striped furniture, as well as slick terrazzo, make it the kind of spot where you might perch for a swanky sunset knockoff and end up settling in for a fully fledged meal in the sky. 
What drink to order At least to start, you shouldn’t flick any further into the drinks list than the house cocktails. They’re all riffs on the classics, and all as elegantly presented as the room (yours might come with a crystal-clear ice cube stamped with Beverly’s signature B). Here, the Bellini is remixed with Campari and rose petals to create a vibrant peachy-red cocktail that’s meant to emulate the sunsets Beverly’s prime location so cleverly captures. But our pick is the deeply flavourful Sake-tini, a blend of Ketel One vodka and Tanqueray gin with Umenoyado Junmai Daiginjo sake and sakura, aka cherry blossom.

What to pair it with You need only sight the kitchen to realise that Beverly is as much a restaurant as it is a bar. It’s entirely open, substantially sized and oriented so the chefs can take in just as much of the view as you can – except they’re wood-firing steaks and you’re eating them. So, make a meal of it. Starters like the lobster cannoli with mascarpone and parmesan are fun (and fun-sized); salads like the Cali cobb and Niçoise with seared yellowfin tuna lean into the LA inspo; and the wagyu steak is a pleasantly surprising menu addition.
Why we love itWe’ve said it before, but we’ll say it again – it’s all about the outlook. Not only are there 270-degree views for days and days, chances are you haven’t seen the city (and its surrounds) from this vantage point before. Sure, the CBD skyline is front and centre, but you can also take in the size of the MCG, the beauty of Bayside, and even the Dandenong Ranges. And while Beverly screams summer – with one hell of an outdoor terrace and a retractable glass roof – it’s not just suitable for the warmer months. If you seek shelter on the 24th floor on a stormy winter afternoon, you can watch the weather wash over the city.

Regular’s tip Don’t be the last in your party to arrive. While there are very few – if any – bad seats in the house, you want to be early so you can claim the one at your table with the best view (it’s not selfish, it’s smart). If you’re running late, though, it’s worth encouraging your table to play musical chairs throughout the meal so you can soak up the surrounds. And a secondary tip: check the sunset time and make your booking accordingly. 
Don’t leave without A spot of people-watching. A bar and restaurant like Beverly ticks a lot of different boxes for a lot of different people, which means the crew is a wonderfully motley one. That means long brunchers, the fashion set, curious locals, and everyone in between.
Make it fancy Or make it fancier, in the case of the already very fancy Beverly. Your first swanky stop should be the Champagne menu, which reads like a who’s-who of the most storied Champagne houses in the world – Veuve Clicquot, Dom Pérignon and Mumm, to name a few – but also includes a $990 bottle of Armand de Brignac’s Ace of Spades Brut Gold Champagne. A just-as-high-flying food pairing? The squid-ink spaghetti, which comes crowned with a whole marron, doused in rich shrimp bisque and topped with saltbush.
