Nothing quenches quite like this fruity and refreshing take on the highball. 

About the cocktail

This non-alcoholic Highball is a classic that you can’t go past. Combining the bubbles of soda to bring out the flavours and botanics of the non-alcoholic spirit, there are also the sweet juices of watermelon in here. This refreshing drink is the perfect thirst quencher on a warm day.

The Highball is a classic simple drink that generally mixes a spirit with soda in a tall glass, but here, this recipe proves that an alternative base, such as the non-alcoholic Lyre’s Dry London Spirit, still works a treat. The addition of lime juice, sugar syrup and a crisp, cool garnish like cucumber brings it all home.   

Ingredients

Method

  1. Add Lyre’s Dry London Spirit, lime juice, watermelon juice and sugar syrup to a mixing glass filled with fresh cubed ice
  2. Add soda and stir
  3. In a separate glass, twist the cucumber ribbon so it curves around the inside
  4. Pour your cocktail mixture into the prepared cucumber glass
  5. Garnish with the mint

Dan’s top tips

Spritzy and refreshing, you’re not going to want to switch this one up too much – it’s pretty bang-on as is. But still, play around with garnishes – if cucumber isn’t your thing, lean to herbs, such as basil or rosemary, or perhaps introduce a lime wedge to enhance that zing of lime in the drink.
