Let’s talk about the Spritz: the “it girl” of cocktails. When we think of a Spritz we usually picture that violent orange, Italian bitters apéritif, Aperol. Which is fair enough, given its popularity has surged in the recent times. But did you know there are many different types of Spritzes?

The Spritz originated in northern Italy, specifically near Veneto and Venice. The word Spritz, pronounced ‘spriss’ in Italy, derives from the German Verb ‘spritzen’ which means to splash or spray.

The legend goes that the Spritz was created in the late 19th century when Venice was still a part of the Austrian Empire. Austrian soldiers stationed in Venice would join the local aperitivo hour by drinking the local wine. However, favouring the alcohol content of their Austrian beer, they would splash some water into the wine to dilute it, creating a version of the modern-day Spritz.

If you’re a baby bartender, this cocktail is one of the easiest to master. All a Spritz needs is a glass, plenty of ice, prosecco (or any sparkling wine), soda water and your flavouring ingredient, in this case, a sweet vermouth. There’s no need for a shaker or a strainer or a fancy garnish. Just splash them all in the glass and give it a quick stir. Easy, right?

Ingredients

  • 45mL sweet vermouth
  • 90mL sparkling wine
  • 30mL soda water
  • Garnish: orange slice and Sicilian green olive

Method

  1. Pour sweet vermouth, sparkling wine and soda water into a wine glass
  2. Add a handful of ice, and garnish with a slice of orange and a Sicilian green olive 

Dan’s top tips

Making a Spritz is super easy. If you really want to get on top of your Spritz game, we recommend keeping the following under consideration. Like any great drink, you need the right amount of ice and dilution. Some people add the ice in first, giving the drink a beautiful sunset sort of look. Others use the ice to mix the drink by adding it last. Either way you’re left with a delicious drink.

We’ve suggested some measurements in the recipe, but it’s really about your taste. If you like the bitter, sweet flavour of vermouth, then add more to your Spritz. If you like it a little more diluted, splash in a tad more soda water. All that’s left is a green olive and slice of orange for garnish, and you’re ready for aperitivo.
