Spiced rum, butterscotch and dates combine in this drinkable riff on a beloved winter dessert.

About the cocktail

Calling all dessert lovers, sweet-tooths and sugar fiends. However you identify, come one, come all. If OTT is your middle name, then we have a treat for you. We have created a dessert cocktail for all the hedonists out there: the Sticky Date.

Picture this: Daylight savings is a distant memory, the sun has set early and the Aussie winter chill has descended. You’ve done the dishes and put your feet up and have the telly on. But there’s something missing. Dessert. You raided the bikkie barrel at morning tea, you’ve outgrown microwave mug cakes, and you’re too cosy for a servo run. The Sticky Date cocktail is your saviour.

The beloved Sticky Date pudding is a dessert staple – moist sponge cake, finely chopped dates and a decadent toffee sauce, topped off with vanilla custard or vanilla ice cream – or both. Our Sticky Date cocktail captures the essence of the original by combining spiced rum with butterscotch schnapps, date syrup and a dash of Licor 43. We complete the homage with a generous helping of whipped cream and a dusting of cinnamon sugar. The result? A rich, creamy cocktail that tastes as dreamy as it looks.

What’s that? Too comfy to get off the couch? Come on. The Sticky Date will take you all of three minutes to make, and you’ll be back to your K-drama escape or reality TV binge in no time. The Sticky Date is a delightful Dan’s Daily original, and now it’s part of your repertoire.

Ingredients

  • 45mL spiced rum
  • 15mL butterscotch schnapps
  • 15mL date syrup
  • 15mL Licor 43
  • 1 whole egg
  • Glass: coupe or martini
  • Garnish: whipped cream and cinnamon sugar

Method

  1. Add all ingredients to cocktail shaker
  2. Dry shake well (without ice) to emulsify the egg
  3. Add cubed ice, and shake until the outside of tin is frosty
  4. Carefully strain into a chilled glass
  5. Finish with the whipped cream and cinnamon sugar on top

Dan’s top tips

We created The Sticky Date from scratch to share our love of indulgent dessert-y drinks, and we want you to have fun with it. A coupe or martini glass is recommended, but we’re big fans of experimentation. Got a favourite mug? A couple of old jam jars? Whatever the vessel, just make sure you can get a spoon in there to scoop out all that whipped cream.

Speaking of the cream, try putting the spoon into the glass after the alcohol, but before you add the whipped cream on top. That way your first spoonful is all about that delicious sticky date flavour.

Don’t have spiced rum? Vodka can serve as an alternative, but remember, a little spiced rum goes a long way in terms of flavour.

If you prefer not to use egg in your cocktails then you can opt for 30mL of cream instead, but we did design The Sticky Date with egg because we found it improves the texture and amps up the body for maximum pleasure.

Never heard of date syrup? Not to worry. It’s available at most supermarkets and health food stores.
