Gin, sparkling, lemon and mint – what’s not to love? Meet the Southside cocktail’s bougie sister.

About the cocktail

We love a Southside. It’s a beautiful, fragrant and delicious drink. But sometimes you want something a little sparkly, a little lighter, maybe even a little festive. So, if you’re in that kinda mood, we present to you the best of both worlds: the Southside Royale. We’ve slightly riffed on the OG recipe by subbing out the Champers for prosecco, but you do you, baby.

In terms of taste and the ingredients, this is basically a Southside with the addition of bubbles. And that’s pretty much how it was born as well, as a sparkling wine version of the already popular Southside cocktail. 

So, when can (or when should) you have a Southside Royale? To be honest, it’s a super refreshing and palatable drink that can be had whenever. However, we reckon you could treat it a few ways. The first, like a little palate cleanser between courses of a meal. The second, before a meal to get your tastebuds prepped for the food. And the third, after a meal as a wee digestive, like limoncello. But, it’s honestly up to you, your guests and your personal preference.

Ingredients

  • 10mL lemon juice
  • 10mL sugar syrup
  • 3–5 mint leaves
  • 30mL gin
  • 120mL sparkling wine
  • Garnish: fresh mint spring and lemon slice

Method

  1. To a cocktail shaker, add all ingredients except the sparkling wine
  2. Add some ice and shake 
  3. Strain into a tumbler or rocks glass 
  4. Top up with sparkling wine
  5. Fill the glass with ice, and garnish with fresh mint sprigs and a slice of lemon

Dan’s top tips

Just like a Mojito, you need to be patient with the mint. Muddle it super gently in the bottom of the glass, being careful not to bruise it. If you bruise or tear the mint, little specks of mint will float around in your drink and that may not be to your liking. But when you treat the mint with kindness, you’ll be rewarded with delicious minty aromas.
