About the cocktail

It seems like the whole world’s in agreement: when it comes to cocktails, it’s hard to go past the classic Margarita. But what happens if you combine it with another iconic cocktail like the Piña Colada? As in, pineapple and coconut with lime, agave and tequila. That’s pure genius. 

If your mind is already drifting to tropical getaways and drinks by the beach, you’re not alone. This cocktail is made for summer (and when you want to pretend it is). Combining the refreshing zing of lime with the sweetness of pineapple and coconut milk, this is the tropical drink you want in your life – umbrella optional. We’ve essentially taken a Tommy’s Margarita (which swaps the OG’s triple sec for agave syrup) and added coconut milk and pineapple juice. 

Another upside of this cocktail is the fact they really don’t come much easier than this. No one wants to slave away on their summer holidays, so with just a few key ingredients and a few shakes of the, erm, shaker, you’ll be back reclining in your hammock in no time.

Ingredients

  • 50mL blanco tequila
  • 20mL lime juice, plus wedges to rim your glass
  • 10mL agave syrup
  • 25mL coconut milk
  • 50mL pineapple juice
  • Glass: old fashioned or rocks
  • Garnish: pineapple wedge 

Method

  1. Rub your glass rim with a wedge of lime, then roll it in salt (you might also like to pop it into the freezer to chill)
  2. Add all ingredients to a cocktail shaker
  3. Add ice and shake until the outside of the shaker is frosty
  4. Carefully strain into your prepared glass with ice
  5. Garnish with a wedge of pineapple

Dan’s top tips

This recipe calls for coconut milk, but when you crack open a can you’ll often see a thick layer of cream at the top. Don’t throw it away. Add a spoon of this as well as the runnier milk to the cocktail for a slightly richer, creamier drink.

If you’re a fan of super-smooth cocktails, you can easily add the pineapple juice and coconut milk to a blender and give them a quick whizz. This makes for a smoother, frothier cocktail.

Another hot tip is to freeze the lime and pineapple juice in advance, and then throw all the ingredients into a blender together. This makes a deliciously slushy cocktail perfect for those hot summer days.
