About the cocktail

The French Martini is a luscious, sweet cocktail that is, in fact, not really a Martini at all. Made up of vodka paired with black raspberry liqueur, lime juice and pineapple juice, it’s a fruity cocktail thats approachable as well as being visually appealing, thanks to its striking colour and creamy foam texture, which comes from a hard shake.

The ‘French’ in its name refers to the core ingrdient of black raspberry liqueur, which originated in France. And because it’s served in a trademark V-shaped glass, it became known as the French Martini. Created in the late 1980s in New York, it may be far from a Classic Martini, but the cocktail boom of the 1980s and ’90s saw this become a huge hit. And it still stands up as a crowd-pleasing fruity and delicately sweet cocktail. 

Other versions of the French Martini switch out black raspberry liqueur for crème de cassis, which is made from blackcurrants and gives the cocktail more of a tart taste. Cranberry juice can also stand in for pineapple juice, although this doesn’t achieve the same frothy texture and foam the pineapple creates.

Ingredients

  • 5mL lime juice
  • 30mL pineapple juice
  • 20mL black raspberry liqueur
  • 40mL vodka
  • Glass: martini or coupe
  • Garnish: pineapple wedge and raspberry

Method

  1. Pop your glass in the freezer to chill for about 30 minutes 
  2. Add all ingredients to a cocktail shaker 
  3. Add ice, then shake until the outside of the tin is frosty
  4. Strain into your chilled glass
  5. Garnish with a pineapple slice, lime wedge or two skewered raspberries

The shaking of this cocktail is essential to creating the beautiful layer on top. While the ice works to chill and slightly dilute the drink, it is incorporates tiny air bubbles that create the foamy texture. Make sure you shake this mix well for about 20 seconds before straining into your chilled glass.

It can be worth experimenting with the garnishes on your French Martini. Just combine fresh raspberries with a twist of lemon on a cocktail pick, or float a slice of orange. You might even like to add a splash of prosecco at the end to give your cocktail a little fizz, which will lighten it up.
