It’s light, it’s fruity and oh-so delicious – it’s one of the easiest, summery cocktails we know. 

About the cocktail

Welcome back to another episode of Mixing With, the cocktail collab series we’ve all been needing. We’ve got a very special content creator mixing bevvies with us this time – the enigmatic, super-hilarious Starr. If you’re on the Tok, you’d be familiar with Starr’s lighthearted and fun content (128k followers agree). If not, Starr is a Sydney-based content creator, podcaster and comedian who you need to get across.

Starr is making a Watermelon Gin Fizz with us today, so we thought it was only appropriate to ask her our fave question: You're throwing a cocktail party, you get to invite three celebs, who are they and what cocktails do you make for them? Of course, Starr has the perfect answer: “Margot Robbie, my long-lost sister, will be having a Watermelon Gin Fizz because I'll be really good at making them by this point and she will be super impressed (might even ask me to feature in a film!). Kim Kardashian, my iconic girl-boss queen, will be having a Lychee Mojito (sugar-free) and Lizzo, my sassy icon, will be having a Spicy Marg.”

Back to Watermelon Gin Fizzes, though. What’s to love about this fruity drink? “I love that the Watermelon Gin Fizz is super simple to make and you really don't need much at all,” says Starr. “I think cocktails can be overwhelming sometimes because there are so many random ingredients in some of them that you typically wouldn't have at home, so this is the perfect fit for anyone looking for a hassle-free delish drink to impress their friends with.”

As you may have guessed from the name, this is a watermelon and gin drink, so it’s beautifully light and sweet with heaps of delish fruitiness. A perfect fit for Starr. “The Watermelon Gin Fizz has truly captured who I am,” says Starr. “Sweet, fresh, fun, colourful and, of course, delicious!”

Watch: How to make the Watermelon Gin Fizz

Ingredients

  • 45mL gin
  • 15mL watermelon liqueur
  • 5mL sugar syrup
  • 20mL fresh lime juice
  • 60mL soda
  • Frozen watermelon ice cubes (pour watermelon juice into an ice cube tray and freeze)
  • Garnish: watermelon wedge

Method

  1. Add everything but soda and watermelon ice cubes to a cocktail shaker
  2. Add regular ice, seal shaker and shake until the outside of the tin is frosty
  3. Strain into a chilled highball glass over frozen watermelon ice cubes
  4. Top with soda and stir to combine
  5. Garnish with a wedge of watermelon

Starr’s top tips

All this talk of watermelon and gin making you salivate? Us too. Starr’s got some tips and tricks to make sure your bevvie is the best it can be. 

The first? “Don’t forget to fill up the ice tray!” Okay, seems a tad obvious, but we’ve all forgotten to do it at one point or another. For this drink, that means pre-freezing loads of watermelon juice to create the best cubes for this cocktail. Instead of regular ice diluting your drink as you sip, these watermelon cubes deliver extra flavour along the way. Genius!   

Next, everyone likes a little snack to chew on while having a cocktail, so what does Starr recommend? “An iconic grazing board with heaps of fresh veggies, cheeses, colourful dips and fresh Turkish bread. Fun textures and flavours to pair with the freshness of the cocktail.” Sounds perf.
