A mix of techniques and fermenter configurations was used for this wine, including cold maceration, open fermenters, roto-fermenters, racking and returns. Old French and American oak barrels are used to add tannic structure and balance to the blend. The 2017 Shiraz is dense and inky in colour displaying aromas of lifted blackberry fruits, black olives and hint of black pepper. The palate is full bodied with a core of bright red berried fruit sweetness with subtle cedar and nutmeg, balanced by a fine tannin structure and soft acidity.
