Matured for 4 years and using only stringbark honey and paperbark sourced sustainably by our Aboriginal harvesters, this whisky is sweet and smoky Only 312 bottles - individually numbered. Bright, nutty oak greets nose on this whisky, developing into old-fashioned oat porridge drizzled with bush honey and eaten at a well-worn redgum table. Someone hands you a slice of fresh green apple on a clean linen napkin, and there’s a bowl of country bread dough rising in the sunbeam coming through the kitchen window. The soft, approachable palate offers notes of boot polish and rain on a dry paddock, while the subtle finish of well-seasoned timber and black pepper, dry despite the influence of honey, demands another sip. Born from the Larrakia Seven Seasons calendar, this Paperbark Honey Whisky reflects the transition between Heavy Dew Time and Bush Fruit Time when the land is cool, damp and rich with flowering life.
