Bright, nutty oak greets nose on this whisky, developing into old-fashioned oat porridge drizzled with bush honey and eaten at a well-worn redgum table. Someone hands you a slice of fresh green apple on a clean linen napkin, and there’s a bowl of country bread dough rising in the sunbeam coming through the kitchen window. The soft, approachable palate offers notes of boot polish and rain on a dry paddock, while the subtle finish of well-seasoned timber and black pepper, dry despite the influence of honey, demands another sip.
