The 2021 Cabernet Franc was harvested before dawn while temperatures remained cool, ensuring grapes entered the tank at low temperatures. Spontaneous fermentation commenced immediately. After 20 days of alcoholic fermentation, the wine was pressed off the skins. Natural malolactic fermentation followed. In 2022, 50% was aged in refurbished oak barrels for 12 months, while the remaining 50% was stored in stainless steel tanks. The components were blended in April 2023 and bottled in May 2023. No Fining, No Filtration.
Bright deep ruby red. Elegant aromas of vanilla, cinnamon, and truffle mingle with appealing notes of black plum, cherry, and raspberry. The palate is full-bodied with a pleasant sweetness, well-balanced acidity, and refined, high-quality tannins. Finishes clean and persistent with excellent typicality.
The 2021 Cabernet Franc is Served in Cathay Pacific's First and Business Class cabins, with an annual production of only 5,200 bottles.
