Hand crafted naturally fermented sparkling tea, featuring single estate second flush Darjeeling tea, Hibiscus flowers and native Australian Lemongrass, known as Maarr.
This sparkling tea is produced using a unique fermentation process inspired by winemaking, aimed at achieving a complex flavour, rich body, and smooth mouthfeel.
The process incorporates a non-Saccharomyces yeast strain and extends over 60 days to increase levels of gluconic acid, glycerol, and fruity esters.
The unique blend of second flush Darjeeling, Hibiscus and Maarr is the perfect balance of tart, fruit, floral and a spice.
Compliments rich, aromatic, spicy and smoked foods such as chili, BBQ ribs, grilled chicken, and beef. Pairs well with goats cheese and dark chocolate.
