This Junmai Ginjo is a custom made version of ``Shoryu no Mai Junmai Ginjo'', which is made by polishing the miraculous Isehikari rice to 50%.
This rice is brewed using underground water from Hida Takayama, using Ise's ``Isehikari'' rice and Gifu's ``Hidahomare'' yeast, and ``Kanazawa Yeast.''
It has a refreshing aroma and is easy to drink, with a soft acidity reminiscent of yellow apples.
