Founded in 2018 by Sam Lowe and Chantal Daniels, this off-grid distillery crafts its spirit with unfiltered mountain stream water and a mash bill of four malts—three from Griffiths, NSW (one roasted to chocolate), and a heavily peated malt from the Scottish borders. Fermented with local pollens and yeasts, the spirit is cut deep for a heavy, oily character, then aged in small-format ex-bourbon barrels from Kentucky, re-coopered in Australia. The result is a luminous gold whisky with a clean, aromatic nose of dark chocolate, malted barley, and light fruit sweetness, evolving into fresh-cut grass, orchard fruits, and subtle peat on the palate. The finish is long and oily, with a chewy, smoky linger. Bottled at 46% ABV, this carbon-neutral certified whisky pairs beautifully with smoked cheeses or dark chocolate.
