Extra Dry, Light Bodied style of RoséPairs well with SeafoodThe opportunity arose in 2023 to work with more Malbec than usual and hot on the heels of our successful debut fizz, Dan knew just what to do with extra fruit; Pink Pet Nat.
This is 100% Bridge Pa Malbec that is produced through an ancient method by bottling partially-fermented wine and allowing the yeast to finish their job in the bottle which traps in the natural bubbles. The spent yeast hulls, aka "lees", remain in the bottle so the wine has a natural haze to it. With refrigeration, the lees will settle to the bottom.
Flourescently pink in the glass and positively bursting with raspberry flavours, this is Fun Wine. Best enjoyed during daylight hours, it's the fizz to serve over a long lunch or to kick off an evening of festivities. Be warned though; once you've had a taste, one bottle may not be enough. Winemaking Sparkling wine styles are defined by the way they get their fizz. Pétillant-Naturel, aka pet-nat, is the least interventionist way to sparkle a wine but comes with a lotta risk. As a wine ferments, yeast consume the grape sugar to produce both alcohol and carbon dioxide (aka bubbles) To make our pet-nat, we started our rosé fermentation in stainless steel tanks and when the wine was almost dry, we bottled it.
