Vino Intrepido‘Wolf In Sheep’s Clothing’ Pinot Grigio
About this product
Three tonnes of ripe fruit was harvested early in the morning at the Merricks Grove Vineyard in Merricks North, and once it arrived at the winery it was immediately pressed. The juice was kept cool to help separate the solids, and while some juice was transferred to one large mature Hungarian oak puncheon (500L) the majority went to a stainless-steel tank for fermentation.Malolactic fermentation was halted in the tank to keep plenty of crunchy freshness, whilst the barrel was allowed to go through malolactic fermentation to create a bit of depth and soft texture. The wine was blended and then bottled at the end of August 2020.

This tastes of pear, chalk, honey and sea-spray and its quality is high. It offers texture and flavour within a dry context and it delivers it with more-than-a-little character. Good wine. Well made and styled.
