Tara Distillery's The Exile is Australia's first legally made Australian Poitín.  The inspiration for The Exile ("pot-cheen") is drawn from some great nights of spirit, music, and dance we've shared in Australia & Ireland, while also calling back to the Shoalhaven Region's illicit spirit-making past. The Exile is a smooth, traditional white spirit handcrafted from local NSW barley & oats. We use a specific mashbill exclusively for The Exile, which is milled & brewed onsite, then slowly triple-distilled in our copper pot stills. A fine hearts cut is taken, then gently mixed with pure harvested rainwater down to 50% abv, it's a smooth and complex dram. It's malty on the nose, smooth and clean on the palate with notes of oat biscuits, chocolate, and hints of apple on the finish. Perfect on its own, over ice, or as an exciting variation in your favourite whiskey cocktails like a whiskey sour. This is a whiskey drinker's drink.  Poitín was first made by Irish monks in the 6th century and known as "uisce beatha" (pronounced "ishka baha") meaning "the water of life". The muse of many a good night out, it has long been celebrated in story and song - the stuff of myth and legend!
